Why hello! I’m so glad you decided to stop by God Save the Quinoa. I’m Mandi, a half-marathon running, gym going, triathlete girl from Texas with a love for food, fitness, and my labradoodle, Maggie. In my spare time, I love to cook healthy, feel-good-about-yourself meals and my dream is to one day, write my very own cookbook! I’m passionate about living a healthy lifestyle and inspiring others to do so by sharing my recipes. More than anything, I want my blog to show how easy and delicious eating healthy can be. I want to help others learn that cooking healthy is possible and can easily become part of your lifestyle.
I’m a vegetarian/pescatarian. I don’t eat meat but I do eat fish. Let’s be honest, it would take an army to keep me away from sushi! Over the years, I’ve discovered that people don’t understand exactly what a “pescatarian” is, so to keep it simple I tell them I’m a vegetarian. …Problem solved!
While you will find many vegetarian and pescatarian recipes on here, you will find your fair share of meat-friendly recipes as well. Just because I don’t eat meat does NOT mean I don’t like to cook it! I love to create new recipes using all types of foods. My husband, Greg, can attest to this. If you could see my recipe book you would see scribbles of notes about how to make “meatless” and “meat-eater” versions of my favorite recipes. Greg is such a trooper for putting up with my shenanigans and kitchen concoctions. But I have to give credit where credit is due, he is the best taste-tester you will ever find!
How God Save the Quinoa was created
I started cooking healthy meals as a way to make healthier decisions and save money from eating out. Once I got the hang of the whole cooking thing, I started creating simple, healthier versions of my favorite recipes that could easily be altered to satisfy the appetites of meat eaters and non-meat eaters alike.
After a few years, I accumulated so many recipes my recipe book was practically bursting at the seams! Everyone told me I should start a food blog but I continued to dance around the idea because “I didn’t have a good camera”. Well, for Valentine’s Day in 2014, Greg surprised me with an awesome camera, a how-to photograph food book, and the domain space for what is now God Save the Quinoa. Needless to say, I was beyond excited and here we are!
